Crust:
-2 scoops whey protein powder (chocolate or vanilla)
-1 egg
-1/4 cup sunflower butter
-3 tbsp oat flour
Mix ingredients in bowl to make dough for the crust. Roll out onto wax paper and divide into 4 sections. Shape dough into sprayed muffin tin for 4 tarts.
Bake crusts at 350 for 5 minutes.
Filling:
-1/2 cup blueberries
-1/4 cup egg whites
-1 scoop vanilla whey protein powder
-1 tbsp honey
Place all ingredients into blender. Blend until slightly foamy and blueberries are pureed. Pour filling into crusts. You may have some filling leftover. I used the leftovers for some protein cupcakes ;)
Bake tarts at 350 degrees for 15 minutes. Let cool and serve!
