Healthy Pumpkin Pie

Healthy Pumpkin Pie

-1 cup oats
-2-3 tbsp sunflower or nut butter
-1 tsp baking powder
-2 eggwhites

Mix all ingredients in a medium size bowl. Spray with glass pie dish with cooking spray and dust with oat (gluten-free) flour to prevent sticking. Bake at 375 for 10 minutes

While the crust bakes. Make the filling, works best with hand mixer:

-6 eggwhites
-2 scoops vanilla whey protein
-1 tsp cinnamon
-1 tsp pumpkin pie spice
-1 packet stevia
-3/4 cup pure pumpkin

Add filling and bake at 375 for 25 minutes.
