Cocoanut Chia Parfait

Cocoanut Chia Parfait

-1 tbsp chia seeds
-1/4 cup unsweetened coconut milk
-1/2 cup fat-free plain greek yogurt
-1/2 tbsp cocoa
-1 packet stevia or few drops liquid stevia

Stir all ingredients in a tall parfait or water glass, even a bowl will do. Then refrigerate overnight. The chia seeds will gel like tapioca, so this 'parfait' will taste like pudding!

*optional: sprinkle a little granola on top in the morning for a sweet crunch ;) My favorite add-on!
