Lemon Chia Protein Muffins

Lemon Chia Protein Muffins



If you love lemon loaf you will love this low-fat alternative! These little muffins are packed with protein, healthy fats and fiber. Great for an on the go breakfast or treat with your coffee.

-2 scoops vanilla whey protein powder
-1/2 cup oat flour
-1tsp baking powder
-1/2 tsp baking soda
-2 tbsp chia seeds
-2 eggs
-1 egg white
-3 tbsp lemon juice


Mix all ingredients as listed in large bowl. Spoon batter into sprayed muffin tin.

Bake at 350 for 15-20 minutes. Makes 4 medium muffins.
